
The word “Afrina” is the local name for what is known as the Salt Flower or Fleur-de-sel.
Just before the salt pans in the Messolonghi salt pans are completely dry, afrina is collected. It is created from a thin crust of the first salt on the surface of the salt pans, which the wind carries away and dries.
It is then collected exclusively by hand by specialized workers with wooden tools; an ancient technique known to those who collect it.
It is the purest form of salt and has a completely different taste from table salt.
Afrina is “sweeter” with a less intense salty taste and, for this reason, is well-known and sought after by confectioners. It is the ideal seasoning for raw foods and salads, while a few afrina crystals in grilled foods just before they are ready will enhance their flavour.
