THYME HONEY

Its production represents about 10% of the total honey production in Greece. The flowering of thyme lasts 30 to 40 days, depending on the soil conditions and the weather. The best thyme honey comes from the Greek islands, especially Crete, Kythera, and the Dodecanese.

Taste: Pleasant flavor, though sometimes—due to its high fructose content—it can leave a slight burning sensation in the mouth.
Aroma: Intensely aromatic.
Color: Usually light amber. (Thyme honey from Attica and the Cyclades is lighter, while that from Crete and the Dodecanese is dark orange.)
Crystallization: This type of honey crystallizes within 6–18 months.
Nutritional value: Thyme honey is believed to have tonic and antiseptic properties, and is recommended for the prevention and treatment of infectious, digestive, and respiratory conditions. It is rich in minerals such as copper and iron, and also contains boron.
